Egg Muffins

I love a quick grab-n-go breakfast for those early mornings.

Egg Muffins


  • 1 Tbs avocado oil

  • 2 oz of raw spinach

  • 1 medium green pepper, about 3 oz

  • 12 eggs

  • 1/2 tsp onion powder

  • 1/2 tsp everything but the bagel seasoning

  • dash or two of cinnamon

  • 2 oz shredded part skim mozzerella cheese

Steps to Make

  1. Heat up a frying pan with the avocado oil and cook down the green peppers.

  2. Add spinach and cook down.

  3. In a mixing bowl, crack all 12 eggs, add onion powder, everything but the bagel seasoning, & cinnamon.

  4. Spray cupcake baking pan with a little oil.

  5. Divide the egg mixture between the 12 cups.

  6. Divide and add the veggie mixture to each of the cups.

  7. Divide and add the shredded cheese to the top.

  8. Bake for about 18 minutes at 350 degrees.

Note: Egg cups will puff up quite a bit and will shrink back down as they cool.

1 Serving = 1 omlete cup
