Lentil Soup

Ingredients

  • 3 Tbs - butter

  • 3 - garlic cloves

  • 1 -  large onion

  • salt/pepper

  • 1 tsp - paprika

  • 3 tsp - cardamom

  • 1 tsp - cinnamon

  • 3 - large carrots stalks

  • 1 - stalk of celery

  • 1/2 cup - unsalted diced tomatoes

  • 8 cups - low sodium chicken or vegetable broth

  • 4 cups - green lentils, after soaking

Steps to Make

  1. Soak your lentils in a bowl of water. 

  2. In a large pot (I love my 7qt dutch oven for soups), melt your butter.

  3. Saute your garlic & onions.

  4. Add spices: salt, pepper, paprika, cardamom, cinnamon.

  5. Add chopped up carrots & celery, and add your diced tomatoes. Mix well and let simmer down a little into those spices.

  6. Add your chicken broth. Bring to a boil.

  7. Add your (drained) lentils.

  8. Once lentils are cooked down and soft, I like to blend the soup into a creamy, smooth soup to enjoy.

1 Serving = about 2 cups of soup.
